Mix the Egg Base
Crack the eggs into a large microwave-safe mug. Add the milk, salt, and pepper. Beat well with a fork until the mixture is uniform and slightly frothy.
Add Fillings
Stir in the diced bell pepper and half of the shredded cheddar cheese into the egg mixture.
Microwave in Stages
Microwave on high for 1 minute. Stir the partially cooked eggs from the edges toward the center and microwave for another 30 seconds until eggs are just set.
Top and Serve
