Instructions
Make the Chicken Rice
Cook diced chicken in a pan over medium heat until no longer pink about 4 minutes. Add cooked rice peas ketchup and soy sauce and stir fry everything together for 2 minutes until well combined and heated through.
Prepare the Egg Mixture
Crack 2 eggs into a bowl per serving and whisk until fully combined. Season lightly with a pinch of salt and set aside while you heat the butter in a non stick pan over medium low heat.
Cook the Omelette
