Instructions
Coat the Chicken
Dip each piece of chicken into the beaten eggs then toss in cornstarch until fully coated. Shake off any excess cornstarch before frying.
Fry the Chicken
Heat oil in a deep pan to 350 degrees F. Fry chicken pieces in batches for 4 to 5 minutes until golden and cooked through. Drain on a paper towel lined plate.
Make the Orange Sauce
In a saucepan over medium heat combine orange juice soy sauce sugar orange zest rice vinegar and garlic. Stir and bring to a simmer.
Thicken the Sauce
Mix 1 teaspoon of cornstarch with 2 teaspoons of water and stir into the sauce. Cook for 2 more minutes until the sauce thickens and coats the back of a spoon.
Toss and Serve
Add the fried chicken to the sauce and toss until every piece is well coated. Serve immediately over steamed rice with green onions on top.
