Instructions
Combine Dry Ingredients
In a large mixing bowl add the rolled oats vanilla protein powder and chia seeds. Stir them together so they are evenly mixed before adding the wet ingredients.
Add Wet Ingredients
Add the natural peanut butter and honey to the dry mixture. Stir vigorously until everything comes together into a thick sticky dough. If the mixture is too dry add one teaspoon of water at a time.
Fold in Chocolate Chips
Add the mini chocolate chips to the dough and fold them in gently until evenly distributed throughout the mixture.
Roll and Chill
Using your hands roll the mixture into 12 equal-sized balls about one inch in diameter. Place them on a parchment-lined tray and refrigerate for at least 30 minutes before eating to help them firm up.
