Instructions
Cook the Noodles
Cook noodles in boiling salted water according to package directions. Reserve a quarter cup of pasta water then drain and rinse noodles under cold water to stop cooking.
Whisk the Sauce
In a large bowl whisk together peanut butter soy sauce sesame oil rice vinegar and sriracha until completely smooth. Add a splash of pasta water to thin the sauce to a pourable consistency.
Toss and Coat
Add drained noodles to the bowl and toss thoroughly until every strand is evenly coated in the glossy peanut sauce.
Garnish and Serve
Top with chopped green onions sesame seeds or crushed peanuts if desired. Serve at room temperature or chilled.
