Instructions
Whisk the eggs
Crack the eggs into a bowl, add the milk and a pinch of salt and pepper. Whisk vigorously for about 30 seconds until the mixture is pale yellow and slightly frothy.
Heat the butter
Heat a non-stick 8-inch skillet over medium heat, add the butter and swirl to coat the entire surface. Wait until the butter is melted and foamy but not brown.
Cook the omelette
Pour in the egg mixture and immediately use a spatula to gently pull the cooked edges toward the center while tilting the pan. Continue until the eggs are just set but still slightly glossy on top, about 2 to 3 minutes.
