Instructions
Blend the Sorbet
Add the frozen pineapple chunks, maple syrup, lime juice, lime zest, and coconut water to a high speed blender or food processor. Blend until completely smooth, scraping down the sides as needed.
Check Consistency
The sorbet should be thick and creamy at this stage. If it is too thick, add a splash more coconut water. Taste and adjust sweetness or acidity with more maple syrup or lime juice as needed.
Freeze Until Set
Pour the blended sorbet mixture into a shallow freezer safe container, smooth the top, and freeze for at least 2 hours until firm enough to scoop.
Scoop and Serve
Remove the sorbet from the freezer 5 minutes before serving to soften slightly. Scoop into bowls or cones and garnish with fresh mint or extra lime zest if desired.
