Pizza Quesadillas

Instructions
Heat the Skillet
Place a large non-stick skillet over medium heat and add a small amount of butter letting it melt and coat the pan evenly. The pan should be hot enough that the butter sizzles but does not burn.
Build the Quesadilla
Lay one tortilla flat in the skillet and sprinkle half a cup of mozzarella cheese evenly across the entire surface then add a layer of mini pepperoni and a pinch of Italian seasoning. Top with a second tortilla and press down gently.
Cook Until Golden
Cook for 2 to 3 minutes until the bottom tortilla is golden and crispy then carefully flip using a wide spatula and cook the other side for another 2 minutes until equally golden and the cheese is fully melted.
Slice and Serve
Transfer the quesadilla to a cutting board and let it rest for one minute before slicing into triangles with a pizza cutter. Serve immediately alongside warm marinara sauce for dipping.
