Instructions
Season the Shrimp
Pat shrimp dry with paper towels, toss with fajita seasoning and a pinch of salt until evenly coated, and set aside.
Cook the Peppers and Onion
Heat olive oil in a large skillet over high heat, add sliced peppers and onion, and cook for 3 to 4 minutes until slightly softened and charred at the edges.
Cook the Shrimp
Push vegetables to one side of the skillet, add seasoned shrimp, and cook for 1 to 2 minutes per side until pink and curled then toss everything together.
Serve in Tortillas
