Prep the Vegetables
Wash and slice all vegetables into thin matchstick shapes. Arrange them in separate bowls so kids can choose their own fillings and build excitement around the meal.
Soak the Rice Paper
Fill a large shallow bowl with warm water. Dip one rice paper sheet for about 15 seconds until it becomes soft and pliable but do not oversoak or it will tear.
Assemble the Rolls
Lay the softened rice paper on a clean damp surface. Place a small handful of each vegetable in the center lower third of the wrapper then fold in the sides and roll tightly from the bottom up.
