Instructions
Prepare Mint Simple Syrup
Combine sugar and water in a small saucepan over medium heat. Once the sugar dissolves, add half the mint leaves, remove from heat, and let steep for 10 minutes. Strain out the mint leaves and allow syrup to cool completely.
Puree the Raspberries
Blend raspberries until smooth then strain through a fine mesh sieve pressing gently to extract all juice while removing the seeds. Discard the seeds and set the strained puree aside.
Muddle and Combine
In a large pitcher, gently muddle the remaining fresh mint leaves to release their natural oils. Add the raspberry puree, fresh lemon juice, cooled mint simple syrup, and cold water then stir to combine well.
Serve Chilled
