Instructions
Whip the Ricotta
Place the ricotta in a food processor or use a hand mixer and whip it with the honey and lemon zest for about 2 minutes until it becomes light fluffy and spreadable. Season with a small pinch of salt and set aside.
Toast the Bread
Toast the bread slices in a toaster or on a hot grill pan until golden brown and crisp. If using a grill pan you can brush the bread lightly with olive oil for extra flavor and beautiful char marks.
Prepare the Peaches
Slice the ripe peaches into thin wedges removing the pit. If the peaches are very firm you can briefly warm them in a pan with a little butter for 2 minutes to help release their juices and soften them slightly.
Spread and Top
Spread a thick generous layer of the whipped ricotta onto each piece of toast going all the way to the edges. Arrange the peach slices on top of the ricotta overlapping them slightly for a beautiful presentation.
Finish and Serve
Drizzle the hot honey generously over the peaches and ricotta. Scatter torn fresh basil leaves over the top and finish with a pinch of flaky sea salt. Serve immediately while the toast is still crisp.
