Brown the Beef
In a large pot over medium high heat sear the beef cubes on all sides until nicely browned then add onion and cook for 2 more minutes until softened.
Simmer the Meat
Pour in the beef broth bring to a boil then reduce heat to low and simmer for 35 to 40 minutes until the beef is very tender and easily pierced with a fork.
Add Peanut Sauce and Vegetables
Whisk in the peanut butter until fully dissolved into the broth then add eggplant and string beans and simmer for 8 to 10 minutes until vegetables are tender.
Serve with Bagoong
Ladle the kare kare into bowls over steamed rice and serve with a small side of bagoong shrimp paste which adds a savory salty contrast to the rich peanut stew.
