Make the special sauce

Whisk together mayonnaise yellow mustard and ketchup in a small bowl until fully combined and smooth. Season with a pinch of onion powder. Set aside in the refrigerator until ready to assemble.

Divide the ground beef into 8 equal loose balls without packing them too tightly. Heat a cast iron skillet over high heat until smoking. Place a beef ball on the skillet and immediately smash it flat with a heavy spatula. Season with salt and pepper. Cook for 2 minutes until deeply charred on the bottom.

Flip each smashed patty and immediately place a slice of American cheese over two patties to melt. Cook for 1 more minute then remove from heat. The edges should be crispy and lacy from the high heat smash.

Reduce the skillet heat to medium low. Whisk eggs with a pinch of salt and pour into the same skillet using the remaining beef fat for flavor. Gently fold the eggs slowly with a spatula creating large soft curds. Remove from heat while still slightly underdone as they will continue cooking.
