Instructions
Soft Boil the Eggs
Bring a small pot of water to a full boil. Gently lower the eggs into the water using a spoon and cook for exactly 7 minutes. Transfer immediately to an ice bath for 2 minutes then peel and slice in half lengthwise.
Toast the Bread
Toast the bread slices until they are golden and firm enough to hold the avocado without bending. A sturdy toast base is important so the toppings do not slide off when you pick up the slice.
Smash the Avocado
Halve and pit the avocados and scoop the flesh into a bowl. Add the lemon juice and a generous pinch of salt. Smash with a fork until you reach a chunky creamy texture. Do not over mix into a smooth paste.
Build the Toast
Spread the smashed avocado thickly onto each slice of toast. Sprinkle everything bagel seasoning evenly over the avocado pressing it in gently so it adheres to the surface.
Top and Serve
