Cook and flake the fish

Steam or bake the white fish fillet until cooked through then allow to cool completely. Flake carefully with a fork checking thoroughly for any remaining bones.

Combine the mixture

In a bowl mix flaked fish with cooled mashed potato egg parsley and lemon juice until combined. The mixture should be firm enough to shape into small patties.

Coat and cook

Shape into small flat patties and press each side gently into breadcrumbs. Heat olive oil in a pan over medium heat and cook for 3 to 4 minutes per side until golden.

Cool and serve

Rest on paper towel for 2 minutes to cool to a safe temperature. Serve with a mild yogurt dip or alongside steamed soft vegetables.
