Instructions
Make the Dough
Dissolve the yeast in the warm water in a large bowl and let it sit for 5 minutes until foamy which shows it is active and alive. Add the flour and salt and mix until a dough forms then knead on a floured surface for 8 minutes until smooth and elastic. Let the dough rest covered in the bowl for 30 minutes.
Shape the Bites
Divide the dough into 6 equal pieces and let kids roll each piece into a long rope about 12 inches long. Cut each rope into 1 inch pieces to create the individual pretzel bites and place them on a parchment-lined baking sheet.
Baking Soda Bath and Bake
Bring 6 cups of water to a boil in a large pot and carefully stir in the baking soda. Drop the pretzel bites into the boiling water in batches for 30 seconds each then remove with a slotted spoon. Sprinkle with coarse salt and bake at 425 degrees F for 12 to 15 minutes until deep golden brown.
Make the Cheese Dip
While the pretzel bites bake, melt the shredded cheddar cheese in a small saucepan with a splash of milk over low heat stirring constantly until smooth and creamy. Pour into a dipping bowl and serve alongside the warm pretzel bites immediately.
