Instructions
Prepare the Filling
Heat olive oil in a small pan over medium heat and saute garlic for 30 seconds. Add spinach and cook until wilted about 2 minutes. Remove from heat, let cool slightly, then mix in crumbled feta and dried oregano.
Prep the Salmon
Preheat oven to 400 degrees Fahrenheit. Using a sharp knife, cut a horizontal pocket into the thickest part of each salmon fillet being careful not to cut all the way through.
Stuff and Season
Spoon the spinach and feta filling evenly into each salmon pocket and press gently to compact the filling. Season the outside of the salmon with salt, pepper, and a drizzle of olive oil.
Bake and Serve
Place stuffed salmon fillets on a lined baking sheet and bake for 16 to 20 minutes until the salmon is opaque and flakes easily with a fork. Serve immediately with a wedge of lemon.
