Instructions

1

Season and Sear Steak

Pat steaks dry and season generously on both sides with salt, pepper, and garlic powder. Heat a cast iron skillet over high heat until smoking. Add 1 tablespoon butter and sear steaks for 2 to 3 minutes per side for medium rare. Remove and rest.

2

Fry the Eggs

Reduce heat to medium-low and add remaining butter to the same skillet. Crack eggs into the pan and cook sunny-side up for 3 to 4 minutes until whites are fully set and edges are slightly crispy.

3

Slice and Serve

Slice rested steaks against the grain into strips. Plate each steak beside two sunny-side up eggs. Spoon any pan juices over the steak and serve immediately.

Substitutions

thin-cut sirloinskirt steak or flank steak for equally fast cooking
butterghee or avocado oil for a higher smoke point

Common mistakes

Using a cold pan which prevents proper searing and causes the steak to steam instead of developing a crust
Skipping the resting time even for thin steaks which causes all the juices to run out when sliced
