Instructions
Blend the Strawberries
Place the hulled strawberries, sugar, lime juice, lime zest, sea salt, and 2 cups of the cold water into a blender. Blend on high speed for 45 seconds until completely smooth and the mixture looks vibrant and silky.
Infuse with Basil
Add the fresh basil leaves to the blender and pulse 3 to 4 times briefly. Do not over-blend the basil or the drink will taste bitter and turn an unpleasant dark color. You want just a gentle green floral infusion.
Strain the Mixture
Pour the blended mixture through a fine mesh sieve or cheesecloth into a large pitcher, pressing gently with a spoon to extract all the juice. Discard the seeds and pulp left in the sieve.
Dilute and Taste
Stir in the remaining 2 cups of cold water into the strained juice. Taste and adjust sweetness by adding more sugar if needed or a little more lime juice for brightness. Stir until any added sugar dissolves.
Serve Over Ice
Fill glasses generously with ice and pour the agua fresca over the top. Garnish each glass with a small fresh basil leaf and a thin slice of lime on the rim. Serve immediately or refrigerate for up to 2 days.
