Blend Base
Add chickpeas, tahini, lemon juice, and garlic to a food processor. Process for 1 minute until a thick paste forms, scraping down the sides as needed.
Add Tomatoes
Add sun dried tomatoes along with 2 tablespoons of their oil to the food processor. Process for another 2 minutes until very smooth and well combined.
Season and Adjust
Add smoked paprika and a pinch of salt then blend again briefly. Stream in olive oil while blending and add 1 to 2 tablespoons of water to reach desired consistency.
Serve
Transfer hummus to a serving bowl, drizzle with extra olive oil, and garnish with a sprinkle of smoked paprika and a few whole sun dried tomatoes.
