Instructions
Toast the Sweet Potato Slices
Brush sweet potato slices on both sides with olive oil. Toast in a toaster on the highest setting for 2 cycles, or place on a baking sheet and broil in the oven for 5 to 7 minutes per side until tender and lightly charred at the edges.
Prepare the Avocado
While sweet potato slices toast, halve and pit the avocados and scoop the flesh into a bowl. Add lemon juice and a pinch of sea salt, then mash to your preferred consistency, either chunky or smooth.
Assemble the Toast
Place the finished sweet potato slices on a serving plate. Spoon a generous amount of smashed avocado onto each slice and spread it to the edges.
