Make the Teriyaki Glaze
In a small saucepan whisk together soy sauce, honey, rice vinegar, minced garlic, and cornstarch. Bring to a simmer over medium heat and cook for 2 to 3 minutes stirring constantly until the glaze thickens enough to coat the back of a spoon. Set aside.
Prepare the Fish
Pat mahi mahi fillets completely dry with paper towels on both sides. Season lightly with salt and pepper. Do not over-season since the teriyaki glaze already contains plenty of sodium from the soy sauce.
Sear and Glaze
Heat a non-stick skillet over medium-high heat with a light coating of oil. Add the mahi mahi fillets and cook for 3 to 4 minutes on the first side without moving. Flip carefully, brush generously with teriyaki glaze, and cook for another 3 to 4 minutes.
Finish and Serve
Brush the cooked fillets with another layer of glaze and let it caramelize for 30 seconds before removing from heat. Serve over steamed rice with steamed broccoli and garnish with sesame seeds and sliced green onions.
