Season the Proteins
Mix crumbled tofu and shredded seitan together in a bowl. Add chipotle powder cumin a generous pinch of salt and olive oil then toss until every piece is evenly coated in the spice mixture.
Cook the Filling
Heat a large skillet over high heat until very hot. Add the seasoned tofu and seitan mixture and cook for 8 to 10 minutes stirring every 2 minutes allowing some pieces to get slightly charred and crispy.
Warm the Tortillas
While the filling cooks warm tortillas directly over a gas flame or in a dry skillet for 30 seconds per side until they have light char marks and become pliable and fragrant.
Assemble and Serve
Divide the hot protein filling among warmed tortillas. Top with your choice of fresh salsa sliced avocado lime juice or shredded cabbage for crunch and serve immediately.
