Instructions
Prepare the Curry
Simmer diced carrots in 3 cups of water over medium heat for 10 minutes until soft. Add Japanese curry roux blocks and stir until completely dissolved creating a thick fragrant curry sauce.
Bread the Pork
Dip each pork cutlet into beaten egg then press firmly into panko breadcrumbs ensuring an even coating on all sides. Press the breadcrumbs gently to help them stick to the meat.
Fry the Tonkatsu
Heat oil in a pan over medium high heat and fry the breaded pork cutlets for about 4 minutes per side until deep golden brown and cooked through. Drain on paper towels.
Slice and Serve
Slice each tonkatsu into strips using a sharp knife then place over a mound of steamed rice. Ladle the mild curry sauce generously over the top and serve immediately.
