Turkey and Cheese Pinwheels

Instructions
Prepare the Spread
In a small bowl mix the softened cream cheese with the Dijon mustard until smooth and well combined then lay both spinach tortillas flat on a clean work surface.
Spread and Layer
Spread half of the cream cheese mixture evenly over each tortilla leaving a half inch border then layer two slices of deli turkey and a quarter cup of baby spinach leaves on each tortilla.
Add the Cheese and Roll
Sprinkle a quarter cup of shredded cheddar cheese over the spinach on each tortilla then roll each tortilla tightly from one end to the other pressing firmly to keep the shape.
Chill and Slice
Wrap each roll tightly in plastic wrap and refrigerate for at least 15 minutes to help it hold its shape then unwrap and slice each roll into 6 equal pinwheel pieces before packing.
