
Gozleme
Gozleme is a traditional Turkish stuffed flatbread made from hand-rolled yufka dough filled with a mixture of feta cheese, spinach, and herbs, then cooked on a hot griddle until golden and crispy. It is a beloved street food traditionally made by Turkish women on a large convex griddle called a sac.

Instructions
Make the Simple Dough
Combine flour, salt, and enough warm water to form a soft, pliable dough. Knead for 5 minutes until smooth, then divide into 4 balls and roll each out very thin on a lightly floured surface.
Prepare the Filling
Wilt the spinach briefly in a dry pan for 1 minute, then press out all excess moisture. Combine wilted spinach with crumbled feta and dried mint in a bowl and season lightly with pepper.
Fill and Fold
Spread filling over one half of each rolled dough round. Fold the empty half over the filling and press the edges down lightly to seal the gozleme into a half-moon shape.
Griddle Until Crispy
Heat a large non-stick pan or griddle over medium-high heat and brush with olive oil. Cook each gozleme for 3 to 4 minutes per side until golden brown, blistered, and crispy. Cut into pieces and serve hot.
