Instructions
Soften the Peppers
Heat the olive oil in a wide skillet over medium heat. Add the sliced green peppers and cook for four minutes, stirring frequently, until they soften and begin to blister slightly at the edges. Season with a pinch of salt at this stage.
Cook the Tomatoes
Add the diced tomatoes, red pepper flakes, and cumin to the skillet. Stir everything together and cook for five to six minutes until the tomatoes break down into a thick, saucy base. The mixture should look jammy and fragrant.
Add the Eggs
Crack the eggs directly over the tomato and pepper mixture. Stir gently and continuously with a wooden spoon or silicone spatula, folding the eggs into the sauce rather than scrambling them separately. Cook until the eggs are just set but still slightly soft and custardy.
Serve From the Pan
Remove from heat immediately as the eggs will continue to cook in the residual heat of the pan. Season with salt and serve directly from the skillet with thick slices of crusty bread for scooping.
