Vegan Almond Joy Bites
These vegan almond joy bites are no bake chocolate coconut treats inspired by the classic candy bar but made entirely with plant based ingredients. They are a satisfying vegan snack or dessert that comes together with just a few simple pantry staples.

Instructions
Make the Coconut Filling
Mix together the shredded coconut, maple syrup, melted coconut oil, and vanilla extract in a bowl until everything is well combined and the mixture holds together when pressed.
Shape the Bites
Scoop about one tablespoon of the coconut mixture and press it into an oval shape. Press one whole almond into the top of each piece. Place on a parchment lined baking sheet and freeze for 20 minutes until firm.
Melt the Chocolate
Melt the vegan dark chocolate chips in a heatproof bowl set over a pot of simmering water or in the microwave in 30 second intervals, stirring until completely smooth.
Coat and Set
Using a fork, dip each frozen coconut piece into the melted chocolate, letting the excess drip off, then return to the parchment lined sheet. Refrigerate for at least 30 minutes until the chocolate is fully set.
