Make the Dough

Bring the water, vegan butter, and salt to a boil in a medium saucepan. Remove from heat and quickly stir in the flour all at once until a smooth dough ball forms and pulls away from the sides of the pan.

Pipe the Churros

Transfer the warm dough to a piping bag fitted with a large star tip. Heat the oil in a deep heavy bottomed pot to 375 degrees Fahrenheit. Pipe 5 inch lengths of dough directly into the hot oil, cutting with scissors.

Fry Until Golden

Fry the churros in batches for about 3 to 4 minutes per side, turning once, until they are deep golden brown and cooked through. Do not overcrowd the pot.

Coat and Serve

Drain the fried churros briefly on paper towels then immediately roll them in the cinnamon sugar mixture while still hot so it sticks well. Serve right away with melted vegan dark chocolate for dipping.
