Vegan French Onion Soup

Instructions
Caramelize the Onions
Melt vegan butter in a large heavy pot over medium-low heat. Add sliced onions and cook stirring every few minutes for 45 minutes until deeply golden and caramelized. Do not rush this step.
Deglaze and Simmer
Pour in the white wine and scrape up any browned bits from the bottom of the pot. Add vegetable broth and thyme then bring to a simmer and cook for 15 minutes.
Prepare the Toasts
Preheat broiler and place baguette slices on a baking sheet. Toast under the broiler for 2 minutes per side until golden and crispy.
Broil and Serve
Ladle soup into oven-safe bowls and place on a baking sheet. Top each bowl with a toasted baguette slice and a generous amount of vegan Gruyere cheese. Broil for 3 to 4 minutes until cheese is melted and bubbly.
Serve Immediately
Carefully remove bowls from oven using oven mitts as they will be extremely hot. Serve immediately while the cheese is still bubbling and the soup is piping hot.
