Instructions
Prepare the Vegetables
Roughly chop the tomatoes, cucumber, and red bell pepper into large chunks. There is no need to be precise as everything will be blended together.
Blend Everything
Add all vegetables, garlic, bread, olive oil, red wine vinegar, and smoked paprika to a high-speed blender. Blend on high for 2 minutes until completely smooth.
Season and Strain
Season generously with salt and pepper. For a silkier texture, strain through a fine mesh sieve pressing firmly with a spoon.
Chill the Soup
Transfer to a bowl or pitcher and refrigerate for at least 2 hours until thoroughly cold. The flavor improves significantly after chilling.
Serve
