Instructions
Preheat and Prepare Sauce
Preheat your oven to 400 degrees Fahrenheit. In a large oven-safe skillet heat olive oil over medium heat. Add garlic and cook for 1 minute then stir in crushed tomatoes and Italian seasoning. Simmer for 5 minutes.
Add Beans and Spinach
Stir in the drained white beans and baby spinach. Cook for 2 minutes until the spinach wilts into the sauce. Season generously with salt and pepper to taste.
Add Gnocchi and Cheese
Add the dry uncooked gnocchi directly into the sauce and stir to distribute evenly. Sprinkle vegan mozzarella across the top in an even layer.
Bake Until Bubbly
