Prepare the tortillas
Lay each large flour tortilla flat on a clean cutting board. Spread a generous and even layer of hummus across the entire surface of each tortilla leaving about half an inch of border around the edges.
Layer the fillings
Arrange the baby spinach evenly over the hummus layer. Then add the roasted red peppers, shredded carrots, kalamata olives, and red onion in a thin and even layer across the surface.
Roll tightly
