Instructions
Make Dough
Dissolve yeast and sugar in warm water and let sit for 5 minutes until foamy. Add flour and salt and knead for 8 minutes until a smooth elastic dough forms. Let rise for 30 minutes.
Shape Bites
Divide dough into 6 equal portions and roll each into a long rope about 12 inches long. Cut each rope into 1-inch pieces to form the pretzel bites.
Boil in Baking Soda Bath
Bring a large pot of water to a boil and add baking soda carefully as it will bubble. Working in batches, boil pretzel bites for 30 seconds each then remove with a slotted spoon to a lined baking sheet.
Bake
Sprinkle boiled pretzel bites with coarse sea salt and bake at 425 degrees Fahrenheit for 12 to 15 minutes until deep golden brown. Serve hot with vegan cheese dip or mustard.
