Instructions
Prepare the vegetables
Grate zucchini and carrot then place grated zucchini in a clean tea towel and squeeze out as much moisture as possible. This step is important so the fritters hold together properly.
Mix the batter
In a large bowl combine squeezed zucchini grated carrot grated cheddar eggs flour and a pinch of salt. Stir until a thick batter forms.
Pan fry until golden
Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of batter into the pan and flatten slightly. Cook for 3 minutes per side until golden and cooked through.
Cool and serve
Transfer to a plate lined with paper towel to drain any excess oil. Allow to cool slightly before serving to toddlers as a finger food or alongside yogurt dip.
