Instructions
Make the Crust
Preheat oven to 160 degrees Celsius. Combine crushed digestive biscuits with 60g of melted butter and press firmly into the base of a lined 20cm springform tin. Bake for 10 minutes then remove and let it cool.
Blend the Filling
In a food processor blend feta cheese until smooth. Add cream cheese and blend again until fully combined. Add eggs one at a time blending briefly after each addition. Do not overmix to avoid cracking.
Bake the Cheesecake
Pour the filling over the cooled crust and smooth the top. Bake at 160 degrees Celsius for 35 minutes until the edges are set but the center has a slight wobble. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
Top and Serve
Once fully chilled in the refrigerator for at least 2 hours toast the walnut halves in a dry pan and arrange on top. Drizzle generously with runny honey just before serving for the best presentation.
