Viral Cottage Cheese Cookie Dough Bites
These high protein cottage cheese cookie dough bites went viral for being a guilt free way to satisfy your sweet tooth without baking. They are creamy rich and packed with chocolate chips making them impossible to stop eating.

Instructions
Blend the Base
Add cottage cheese maple syrup vanilla extract and sea salt to a blender or food processor. Blend on high for 60 to 90 seconds until the mixture is completely smooth with no curds remaining.
Fold in Dry Ingredients
Transfer the blended mixture to a bowl and stir in almond flour until fully incorporated. The mixture should have a thick doughy consistency. If it is too wet add a little more almond flour.
Add Chocolate Chips
Fold in the mini chocolate chips saving a few to press on top of each bite. The mixture will be soft and slightly sticky which is perfectly normal at this stage.
Chill and Serve
Scoop tablespoon sized portions onto a parchment lined tray and press reserved chocolate chips on top. Refrigerate for at least 1 hour until firm. Store in an airtight container in the fridge for up to 5 days.
