Prepare the Salted Rim

Mix the coarse salt and lime zest together on a small flat plate. Run a lime wedge around the rim of each glass to moisten it. Dip each glass rim into the salt mixture and twist gently to coat evenly. Set the glasses aside while you prepare the drink.

Blend the Watermelon

Place the cubed watermelon into a blender and blend on high speed until completely smooth and liquefied. This should take about 20 to 30 seconds. Do not add any liquid at this stage as watermelon contains plenty of natural juice.

Strain the Juice

Pour the blended watermelon through a fine mesh strainer into a pitcher pressing down with a spoon to extract all the juice. Discard the pulp left in the strainer. Straining gives you a smooth and elegant drink rather than a pulpy one.

Mix the Mocktail

Add the fresh lime juice and agave nectar to the strained watermelon juice and stir well to combine. Fill the prepared glasses with ice cubes then pour the watermelon mixture over the ice. Top each glass with a splash of sparkling water for effervescence.

Garnish and Serve

Place a small triangle of fresh watermelon on the rim of each glass as a garnish. You can also add a lime wheel or a sprig of fresh mint for extra color. Serve immediately while the drinks are cold and the sparkling water is still bubbly.
