Instructions
Prep the Watermelon
Cut the watermelon into uniform bite-sized cubes removing any seeds you find and place them into a large mixing bowl or serving container.
Make the Dressing
Whisk together olive oil and fresh lime juice in a small bowl with a pinch of salt until emulsified and well combined.
Combine the Salad
Pour the dressing over the watermelon and toss gently. Add the torn mint leaves and toss once more being careful not to break up the watermelon pieces.
