Blend the Watermelon

Place the watermelon chunks into a blender and blend on high for 20 seconds until completely smooth and liquid. The natural juice from the watermelon makes this drink naturally sweet and vibrant pink.

Strain the Juice

Pour the blended watermelon through a fine mesh strainer into a pitcher, pressing gently with a spoon to extract as much juice as possible. Discard the pulp left in the strainer.

Muddle the Mint

Divide the fresh mint leaves between two glasses. Using a muddler or the back of a spoon, gently press and twist the mint leaves about 5 times to release their aromatic oils. Do not over-muddle or the mint will taste bitter.

Fill each glass with ice cubes. Add the fresh lime juice and simple syrup to each glass. Pour the strained watermelon juice evenly between the two glasses over the mint and ice.
