Blend the Watermelon

Add the cubed watermelon, fresh lime juice, maple syrup if using, fresh mint leaves, and sea salt to a high speed blender. Blend on high until completely smooth and no chunks remain.

Taste and Adjust

Taste the blended mixture and adjust the sweetness with more maple syrup or tartness with more lime juice according to your preference.

Pour into Molds

Pour the watermelon mixture evenly into popsicle molds leaving a small gap at the top to allow for expansion during freezing. Insert popsicle sticks firmly into the center of each mold.

Freeze Until Solid

Transfer the popsicle molds to the freezer and freeze for a minimum of 4 hours or preferably overnight until completely solid throughout.

Unmold and Serve

To release the popsicles run warm water over the outside of the molds for 10 to 15 seconds. Gently pull the sticks to release and serve immediately.
