Instructions
Brew the White Tea
Place the loose leaf white tea in an infuser or tea strainer and steep in water heated to approximately 75 degrees Celsius for exactly 3 minutes. Remove the tea immediately and allow it to cool since white tea is very sensitive to heat and overbrew.
Blend the Peach and Lime
Peel and pit the ripe peach then blend it until completely smooth to create a fresh peach puree. Combine the peach puree with fresh lime juice and simple syrup in a pitcher and stir until evenly mixed.
Combine and Serve
Fill two glasses with ice and pour the cooled white tea over the ice in each glass. Add the peach lime mixture to each glass, stir gently to swirl the fruit through the tea, and garnish with a peach slice and lime wedge.
