Instructions
Make the Wonton Filling
Combine the ground pork, chopped shrimp, 1 teaspoon of sesame oil, 1 tablespoon of soy sauce, a pinch of white pepper, and a pinch of ginger powder in a bowl. Mix vigorously in one direction until the filling becomes sticky and cohesive.
Wrap the Wontons
Place a teaspoon of filling in the center of each wonton wrapper. Dampen the edges with water, fold into a triangle, then bring the two bottom corners together and press to seal. Repeat with all 24 wrappers.
Prepare the Broth
Bring the chicken broth to a gentle simmer in a large pot. Season with the remaining sesame oil, a touch of soy sauce, and white pepper. Keep warm on low heat while you cook the wontons.
Cook and Serve
Bring a separate large pot of water to a boil. Cook the wontons in batches for 4 to 5 minutes until they float and the wrappers turn slightly translucent. Transfer to serving bowls, ladle the hot broth over, and garnish with scallions.
