Instructions
Sear the Chicken
In a large pan, heat olive oil over medium-high heat. Season chicken thighs with salt, pepper, and paprika. Sear them until golden brown, about 5 minutes per side.
Sauté the Aromatics
Remove chicken and add onion and garlic to the same pan. Sauté until softened, about 3 minutes.
Add Rice and Broth
Stir in the rice, thyme, oregano, and bay leaf. Pour in chicken broth, bring to a boil, then reduce heat to low.
Return Chicken to the Pan
